Tip of the Week

To prepare green beans, corn and peas for the freezer, fill a large pot halfway with cold water and bring to a boil. While you`re waiting, fill the sink up with cold water and add lots of ice. Place the vegetables in a large colander. When the water is boiling, lower them into the water for 1- 2 minutes for corn and green beans, one minute for peas. Lift immediately and lower into the icy water, until just cool. Place in labelled freezer bags, and freeze immediately. I cut squash into thick slices or chunks and microwave in water for 4 minutes or so, and immediately bag and freeze. They come out much less mushy this way.
