Why shouldn´t I let phlox go to seed?

Phlox - Don't Go to Seed

When you allow phlox to go to seed, you will grow seedlings that revert back to the original phlox colors, instead of looking like the parent plants. Eventually, the seedlings will crowd out the parent plants, and you will lose your phlox cultivar completely.
