Tip of the Week

3 large tomatoes (sliced)
2 medium zucchini (thinly sliced)
1/2 medium onion (thinly sliced)
1 Tbl olive oil
1 Tbl chopped fresh herbs
black pepper

Alternate layers of sliced tomato, zucchini, and onion in a 2-1/2 quart microwave-safe container. Cover and cook on High (100%) for 2 minutes. Drizzle with olive oil; then sprinkle with herbs and black pepper. Cover and cook on High (100%) for approximately 4-6 minutes.
