Tip of the Week

Here is a great pasta sauce that freezes well, and is very easy to make.
Take a white onion finely chopped. Add 4 cloves of minced garlic, one chopped bell pepper and a pound of peeled Roma tomatoes. Saute in olive oil, and season to taste. Put up in freezer bags. This is a quick simple sauce that makes use of your summer garden.

Note: If your tomatoes are very acidic add a large spoonful of sugar to the pan. It will cut the acidity.
